Tradition: Many ancient Greek cities in Makedonia, like Pella, Sindos and Pydna, were famous for their excellent wines. Archaeological findings like the Makedonian crater (340 B.C.), which inspired the design of the Makedonikos wine bottle, bear witness to a long wine-growing tradition in this area.
Location: The vineyards are located in the hilly countryside of Northern and Central Makedonia.
Soil: Bright sandy clay, rich in minerals.
Sub-soil: Calcareous.
Climate: Continental balanced with sufficient humidity in Northern Makedonia. In Central Makedonia, the climate is moderate, with adequate humidity for the perfect maturation of the grapes; long summer days, light rainfall and cool nights.
Classification: Makedonikos regional wine (vin de pays).
Varietal composition: The Greek indigenous Xinomavro and Moschomavro.
Harvest: 10th October - end of October.
Vinification techniques: Short extraction and then fermentation in temperature-controlled stainless steel tanks, at carefully controlled temperature.
Character: A vibrant rose colour with ripe strawberries on the nose and raspberry jam-like flavours. Round and full taste with a surprisingly clean finish.
Serving suggestions : Chicken salad, pasta carbonara, grilled sea bass, poached salmon, roast chicken with parsley and thyme.
Serving temperature: Best served at 12-14 oC.

    MOUNT ATHOS - METOCHI CHROMITSA: Agioritikos Rose

    Location: The slopes of Mount Athos , a unique place of great natural beauty; a monastic community dedicated to the perpetual glorification of the Mother of God.
    Grape varieties: Limnio, Roditis, Xinomavro.
    Harvest: Beginning-middle of September for the Limnio and the Roditis, middle of October for the Xinomavro.
    Vinification techniques: The free-run must remains in contact with the skins for 18 hrs. The must is collected and chilled. It then settles in stainless steel tanks at low temperature (~ 10 oC) for 24 hours. The clarified must ferments in stainless steel tanks with cooling jackets at low temperature (19-22 oC).
    Classification: Agioritikos regional wine.
    Character: Attractive deep rose colour. Impressive intense strawberry and raspberry aromas. The opulence of the nose follows on to the palate, contributing to the appealing balance of its rich and lively taste.
    Serving suggestions: A delightful wine that perfectly escorts grilled tuna and swordfish, broiled clams, prawns in tomato sauce, roast chicken with rosemary and rice and light desserts.

    Tsantalis Roditis
    A pleasant rose, dry wine with fruity aromas and a fresh taste.

    A slightly pink-skinned grape traditionally grown in the Peloponnese. The vine is susceptible to powdery mildew. It ripens late, yet retains its acidity even though it is primarily grown in the hotter climate of central Greece.
